I was wondering if it was possible, to create a mod that would remove a Co Op friends HP bar from my HUD, and remove there icon from the Mini map. I think this kinda mod could create a fun sorta vs mode style gameplay. Im not sure if it is possible, but it doesn't hurt to ask right?

That may be possible. If so, I would bet that's it's part of interface.vpp_pc/hud.str_pc/hud.lua.
