How can I change these variants then? Say I wanted to add a Decker variant?

At a rough guess you would need to name the Decker variant as a Saint variant. You could only have one Saint variant per vehicle though, so you would have the option of either not having a Saint variant for that vehicle, or setting it up with a % of chance that it would be Decker or Saint when it spawned.
